Carboholics rejoice! It’s National Spaghetti Day. Some form of this wormy goodness has existed since forever. According to Wikipedia, “The first written record of pasta comes from the Talmud in the 5th century AD and refers to dried pasta that could be cooked through boiling,[3] which was conveniently portable.[4] Some historians think that Berbers introduced pasta to Europe during a conquest of Sicily.
Given the choice, I will opt for angel hair with heaps of garlic and olive oil every single time. On nights where something heartier is needed, I go straight for my infamous meat sauce. A pot of my sauce never seems to last very long. If/when there’s anything left, it tastes even better the next day.
The recipe
Make a sofrito with 1sm. white onion, 1 green pepper, two tomatoes. Heat in a 4-6qt pot with 1-2 tbsp olive oil until fragrant. Add 1 lb ground beef and brown the meat. As it’s cooking, shake in 1 tbsp of italian seasoning OR 1 tbsp each oregano, basil, 1 tsp thyme, paprika, and add salt and and one jar of your favorite marinara sauce. Simmer low and slow for 30 min. Serve over your favorite pasta,
That’s it! In the past I always used a 14 oz can of puree tomato, but in my later years, I’ve just said fuck it and went the store bought sauce route. If you’re trying to cut back on the red meat, you can substitute pork or a mild sausage chub. The flavor might even surpass the meat sauce.
